How to make it

  • In a large bowl, whisk together yogurt, cilantro, ginger, garlic, cumin and cajun seasoning. Mix in shrimp, cover and refrigerate for 30 to 60 minutes.
  • Remove shrimp from marinade, shaking off excess.
  • Heat oil in a large nonstick skillet over high heat.
  • Add shrimp to pan and saute until opaque in center, or about 3 minutes.
  • I served over rice and 1/4 lemon on the side to squeeze over. Garnish with chopped cilantro or thinly sliced green onions.
