An easy breakfast that's great for the grill or for camping.

Ingredients
  • 3/4 cup sugar
  • 3-4t cinnamon
  • 1-2t nutmeg
  • 8 "brown and serve" rolls, uncooked and quartered
  • 1 stick butter, melted
  • 1lb Canadian bacon or breakfast ham rounds
  • Assorted fruits(per taste or season ie fresh pineapple(chunks), whole, fresh strawberries, banana(thickly sliced, melon chunks, orange segments, etc)

Directions
  1. Combine sugar, cinnamon and nutmeg in small bowl.
  2. Place roll quarters in large zipper bag and drizzle with melted butter.
  3. Shake until coated.
  4. Add sugar mixture and shake again until coated.
  5. On soaked bamboo skewers, thread each with 2 pieces each of fruit, rolls, and ham(folded on itself into "quarter" circles). Do not crowd skewers.
  6. Grill or cook using indirect heat for about 10 minutes until just heated.
  7. *For camping, just prepare the sugar mix in airtight container and take along ingredients. Cook over open fire on long skewers, but be careful not to have them too close to the fire, as they will burn easily. Or, place over the side coals on a camp cooking rack*

Keni, what a clever idea! Did you make that up yourself? I've gotta try it. Although I've gotta admit, the meat in your photo looks like curled up tongues. :-)


Its okay Babs...I thought it was folded up strawberry pancakes! I just saw the pic, not the ingredients! I don't camp, but maybe I could do this on the BBQ.


I changed the pic, now, so it's not quite as "tongue-like" ;) We did 'em on the grill yesterday, Lillian, so that's just fine...they only need enough time to cook the rolls...the rest just heats up...oh, and the strawberries are sometimes better with no, or little "cooking", so you might wanna keep them on the edge with very lil heat or put them on after cooking.


Very pretty pic. We don't camp anymore, but my grill is just outside the door! Very good and fun way to serve breakfast.
