I love to serve this topped on a grilled burger, tasty and delicious! Better than old fashioned Creamed Spinach! Enjoy! :)

Ingredients
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1/2 teaspoon honey
  • 1 cup washed, stemmed, and chiffonade-cut spinach
  • 1 cup julienned Granny Smith apple
  • 1 cup roasted corn (you can also find this @Trader Joe's Frozen!)
  • 1/2 cup diced tomatoes
  • 1/2 cup pecan halves, toasted (optional)
  • Salt and pepper, to taste

Directions
  1. Whisk vinegar, oil, and honey together in a bowl, then add remaining slaw ingredients.
  2. Set aside for about 20 minutes.
  3. Serve on a fresh grilled Burger or side for a grilled Steak!
  4. It is a wonderful addition to any Main Meal!

I am with Pink on this...Never had anything like it..but I'm gonna! No cupboards for me Pink..I'm going for all out fresh..I'm going to wait a few weeks for Bucks County Corn,and Spinach, tomatoes, from my garden. If it were fall I'd wait for the apples. Heck, I'll still have tomatoes, spinach, and corn that I put up, when the apples come in. I'll make it fresh again. I win!
