Ingredients
  • Research shows that high-heat cooking, such as grilling or broiling, produces heterocyclic amines (HCA's), which research has linked to some cancers in humans.
  • When fat drips into flames, another carcinogen called polycyclic aromatic hydrocarbons (PAHs) forms, which drifts in smoke and coats meat.
  • But with a few precautions, you can still enjoy a barbecue.
  • Marinate meat with citrus juices, vinegar, herbs, and olive oil to reduce HCA formation.
  • Use lean meat and trim extra fat to minimize drippings.
  • Cover the grill with foil (punch holes in it first) to keep smoke off food.
  • Piercing meat causes fat to drip, leading to flame-ups, Flip meat with a spatula instead.
  • Avoid eating pieces of charred or blackened fat and meat-these are highest in HCA's.

Thanks for the info. I used to work at a steak restaurant and we cooked all the meat on a flat surface, not a grill because of the carcinogens. I don't eat steaks but I do appreciate a good grilled BBQ chicken. Great post!

Hi Jen. Great post. Actually, I had heard about charred meats having carcinogens way back in college. I try to use techniques I have heard that helps reduce the risk. Raising your food up off the grate so that if it drips on the coals, the wind has a chance to disperse smoke from the flair ups is one. Thanks for the reminder... Jim
