    I work at the Ministry of Health in Brazil and I assure you the story is true,those chemicals produced by charred meat, charcoal broiled welldone meat, those darker almost black parts are the worst, they contain the same cancer causing stuff that cigarettes have, but by golly it tastes so good!! We only have to eat it occasionally and it will take many years to get cancer.

    Hi Jen. Great post. Actually, I had heard about charred meats having carcinogens way back in college. I try to use techniques I have heard that helps reduce the risk. Raising your food up off the grate so that if it drips on the coals, the wind has a chance to disperse smoke from the flair ups is one. Thanks for the reminder... Jim

    Thanks for the info. I do use foil a lot but I do love my grill food also.You are right, they say almost everything is a "cancer" risk.

    Thanks for the info. I used to work at a steak restaurant and we cooked all the meat on a flat surface, not a grill because of the carcinogens. I don't eat steaks but I do appreciate a good grilled BBQ chicken. Great post!
