Ingredients

1 Strawberry Cake Mix

1 package instant vanilla pudding

4 eggs

1/2 cup Crisco oil

3/4 cup water

1 small can coconut

1 cup chopped pecans

1 cup sliced strawberries, can use frozen, but best with fresh

STRAWBERRY SUPREME CAKE FROSTING

1 large package cream cheese, softened

1 stick unsalted butter, softened

1 box powdered sugar (can add a little more)

1 cup crushed strawberries

Directions

STRAWBERRY SUPREME CAKE

In large mixer bowl, with an electric mixer, place cake mix, pudding mix, eggs, oil, and water

Beat on medium for 30 seconds

Add strawberries, coconut, beat for 2 minutes

Add pecans last, mixing only until blended

Pour into 3 greased and floured 9-inch cake pans

Bake at 350 degrees until done (test with toothpick, or until the cakes shrink from the sides

Remove from oven, cool for about 10 minutes in pan, turn out and cool on a wire rack

STRAWBERRY SUPREME CAKE FROSTING

In large mixer bowl, with an electric mixer, cream the cheese, and butter until smooth

Add berries and sugar, beating until smooth

On cake plate or stand, assemble the cooled cake layers, spreading frosting between layers, and covering sides and top of cake

Garnish with whole fresh strawberries

May refrigerate
