Bacon and Onion Muffins

- 1/2 pound bacon diced shopping list
- 1/4 cup chopped white onion shopping list
- 2-1/4 cups unbleached flour sifted shopping list
- 3 teaspoons baking powder shopping list
- 1/2 teaspoon baking soda shopping list
- 1/2 teaspoon salt shopping list
- 2 large eggs slightly beaten shopping list
- 1/3 cup milk shopping list
- 1 cup dairy sour cream shopping list
- 1 tablespoon sesame seeds shopping list
How to make it
- Fry bacon until crisp in skillet then remove with slotted spoon and drain on paper towels.
- Sauté onion in 1 tablespoon bacon drippings until tender then set aside to cool.
- Sift together flour, baking powder, baking soda and salt in large mixing bowl.
- Combine eggs, milk and sour cream in small bowl then blend well.
- Add all at once to dry ingredients stirring just enough to moisten.
- Stir in bacon and sautéed onion then spoon batter into greased muffin pan filled 2/3rd full.
- Sprinkle with sesame seeds then bake at 375 for 20 minutes.
- Serve hot with homemade jelly or jam.
