This is a very light Caribbean sauce and delicious on shrimp, fish and chicken.........enjoy ......................

Ingredients
  • 1 - cup butter ( or margarine )
  • 1/4 - cup dark rum
  • 2 - tablepoons fresh key lime- juice
  • 1 - teaspoon key- lime zest
  • 2 - tablespoons minced fresh ginger
  • 1 - tablespoon dark brown sugar

Directions
  1. Combine all ingredients in a small saucepan and cook, stirring frequently, over medium heat until the butter melts and sugar is disolved.
  2. remove from heat and pour into a heat-proof glass measuring cup until ready to use.
  3. baste fish or chicken with the sauce before and while grilling and serve remaining sauce on the side...........enjoy ............

Sounds terrific, Tink - my only problem is, I can't tolerate dark rum. Would white rum do just as well for this?
