Chile Lime Skirt Steak Skewers

- MARINADE: shopping list
- 1/4 cup fresh lime juice shopping list
- 2 tablespoons olive oil shopping list
- 1 tablespoon chopped chipotle peppers in adobo sauce shopping list
- 2 cloves garlic, peeled and minced shopping list
- 1-1/2 teaspoons ground cumin shopping list
- beef/VEGGIES: shopping list
- 1-1/2 pounds beef skirt steak shopping list
- 8 small fresh tomatillos, papery skins removed shopping list
- 2 large fresh Anaheim peppers, seeded and cut into 2-inch pieces shopping list
- 2 large red onions, each cut into 8 wedges shopping list
- 2 tablespoons olive oil shopping list
- salt and pepper to taste shopping list
How to make it
- MARINADE:
- In a small bowl, combine lime juice, olive oil, chipotle peppers, garlic and cumin and set aside.
- BEEF:
- Cut skirt steak crosswise into 3 equal pieces.
- Place beef and marinade in a large zipper-top plastic bag and securely close; turn to coat meat well;
- Place bag in refrigerator for 1 hour.
- Soak one dozen, 9-inch wooden skewers in water for 1 hour.
- VEGGIES:
- Combine tomatillos, peppers and onion wedges in medium bowl. Drizzle with oil; toss to coat.
- Set aside.
- PUT IT ALL TOGETHER:
- Remove skewers from water and alternately thread vegetables evenly onto six skewers.
- Remove beef from marinade; discard marinade.
- Insert remaining skewers into beef pieces in the same direction as the grain (two skewers per piece).
- Place beef on grill over medium heat or under broiler.
- Grill uncovered, or broil 10 to 13 minutes for medium-rare to medium doneness, turning occasionally.
- Place vegetable skewers on grill or under broiler;
- Grill or broil 6 to 8 minutes or until tender, turning once.
- Cut beef between skewers to make individual servings.
- Season beef and vegetable skewers with salt and pepper as desired.
