Chile Lime Skirt Steak Skewers Recipe
Another great garlic/lime/chiles grillin' recipe. Just love the flavor combination. Let the wooden skewers soak while the meat is marinating for an hour.

Ingredients
  • MARINADE:
  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon chopped chipotle peppers in adobo sauce
  • 2 cloves garlic, peeled and minced
  • 1-1/2 teaspoons ground cumin
  • BEEF/VEGGIES:
  • 1-1/2 pounds beef skirt steak
  • 8 small fresh tomatillos, papery skins removed
  • 2 large fresh Anaheim peppers, seeded and cut into 2-inch pieces
  • 2 large red onions, each cut into 8 wedges
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Directions
  1. MARINADE:
  2. In a small bowl, combine lime juice, olive oil, chipotle peppers, garlic and cumin and set aside.
  3. BEEF:
  4. Cut skirt steak crosswise into 3 equal pieces.
  5. Place beef and marinade in a large zipper-top plastic bag and securely close; turn to coat meat well;
  6. Place bag in refrigerator for 1 hour.
  7. Soak one dozen, 9-inch wooden skewers in water for 1 hour.
  8. VEGGIES:
  9. Combine tomatillos, peppers and onion wedges in medium bowl. Drizzle with oil; toss to coat.
  10. Set aside.
  11. PUT IT ALL TOGETHER:
  12. Remove skewers from water and alternately thread vegetables evenly onto six skewers.
  13. Remove beef from marinade; discard marinade.
  14. Insert remaining skewers into beef pieces in the same direction as the grain (two skewers per piece).
  15. Place beef on grill over medium heat or under broiler.
  16. Grill uncovered, or broil 10 to 13 minutes for medium-rare to medium doneness, turning occasionally.
  17. Place vegetable skewers on grill or under broiler;
  18. Grill or broil 6 to 8 minutes or until tender, turning once.
  19. Cut beef between skewers to make individual servings.
  20. Season beef and vegetable skewers with salt and pepper as desired.
