Garlicky Chicken Pasta With Veggies Recipe

Ingredients

1 box Bow Tie Pasta

1 T butter

1 T Olive Oil

3 pinches kosher salt

3 T Olive Oil

2 T Butter

1 package skinlesss, boneless chicken breast tenderloins

1 med white onion, rough chopped

1/2 red bell pepper, chopped

3-4 heaping forksful chopped garlic

3/4 tub chopped fresh mushrooms

1 small tub grape tomatoes

3 handsful frozen chopped spinach (I buy it in the bag, and just reach in a get what I need. Probably half of a 10 oz box).

Italian Seasoning

Seasoned Salt

Garlic Pepper

Red Pepper Flakes

1/2 c Parmesan

Chicken Stock or wine

Add'l parmesan, olive oil, butter as needed

** About 1/4 c sour cream, and 6-8 oz of cream cheese are great additions for creamier sauce. You could also add a bechamel sauce, or cream of mushroom soup (or cream of celery, cream of chicken, etc.).

Directions

Bring pot of water to boil, add olive oil, butter and kosher salt.

When boiling add pasta

Cook until al dente

While pasta is cooking, cut chicken into bite sized pieces; chop onion, and pepper

Add olive oil and butter to large skillet

Add chicken, onion and red pepper to skillet

Season with Italian Seasoning, Garlic Pepper and Seasoned Salt

When chicken has cooked through, add spinach and mushrooms

Add chicken broth to degalze. (White wine could also be used)

Stir in pasta, cheese, red pepper flakes and grape tomatoes
