Chickpea Chocolate Chippers

- 1 (15 oz) can chickpeas, drained and rinsed shopping list
- 2 tsp vanilla shopping list
- 2 tbsp water shopping list
- 2/3 cup brown sugar shopping list
- 2 tbsp sugar shopping list
- 1/2 cup stick margarine shopping list
- 1/4 cup shortening shopping list
- 1 cup flour shopping list
- 1 cup whole wheat flour shopping list
- ½ cup old fashioned oats shopping list
- 1 tsp cornstarch shopping list
- 1 tsp baking soda shopping list
- 1/2 tsp salt shopping list
- 1 cup miniature dark chocolate chips shopping list
How to make it
- Preheat oven to 350F.
- Puree chickpeas, vanilla and water until very smooth. Set aside.
- Cream sugars, margarine and shortening in a large bowl.
- Beat in chickpea mixture.
- Mix together flours, oats, cornstarch, baking soda and salt. Beat into chickpea mixture.
- Fold in chocolate chips.
- Bake on ungreased sheets for 11-12 minutes.
- Cool 2-3 minutes on sheets then remove to a wire rack and cool completely.
