How to make it

  • Remove all the bones, but leave the skin
  • Grill on top of the stove, skin down, untill the salmon turns white-ish half way up
  • Move to a baking dish, still skin down
  • Season lightly with salt and pepper
  • Mix the mayonnaise with the parsely and finely chopped garlic (for 1 portion of fish, use 1-2 tbsp mayonnaise)
  • Spread over the fish
  • sprinkle with bread crumbs
  • Put under the grill for a few minutes until golden.
  • Enjoy!

    This sounds good - I have to get motivated and make some mayo before I could try it!! I think it'd work well with other meat-y fish too like grouper, don't you think?
