Tomato-Ricotta Rigatoni With Sausage Recipe
This is a super easy dinner. Quick and delicious. My husband said I should make it again soon. It makes quite a lot, enough for 6 to 8 depending on how hungry you are. We ate it to fast to take a picture.

Ingredients
  • 1 lb Italian Sausage, bulk
  • 4 cups Tomato Sauce (fresh or from a jar)
  • 1 cup Ricotta cheese
  • 1 tbsp Balsamic Vinegar (optional)
  • Seasonings to taste
  • 1 lb Rigatoni (prepared according to package directions)
  • Grated Parmesan cheese for garnish

Directions
  1. Brown the sausage in a dutch oven. Remove and drain fat.
  2. Add tomato sauce and balsamic vinegar to sausage and heat through.
  3. Add Ricotta to the tomato sauce and heat through. Season to taste
  4. Mix in cooked Rigatoni and stir to coat well.
  5. Serve topped with fresh grated parmesan cheese.
