How to make it

  • Cook bacon in large heavy skillet over hot coals until crisp; drain, reserving drippings.
  • Set bacon aside.
  • Brown potatoes in a small amount of reserved drippings in skillet; remove potatoes and set aside.
  • Heat desired amount of reserved drippings in skillet.
  • Beat eggs with milk in bowl.
  • Add to skillet.
  • Cook until eggs are set, stirring frequently.
  • Add bacon, potatoes and cheese.
  • Cook until cheese melts, stirring constantly.
  • Spoon onto tortillas; roll to enclose filling.
  • Place on plates.
  • Serve with salsa.
  • NOTE; Alot of times I cut this recipe in half if there aren't that many of us.
