Campfire Bacon and Egg Burritos

- 3 lbs. bacon, chopped shopping list
- 3 (16-oz.) cans potatoes, drained, sliced shopping list
- 24-eggs, beaten shopping list
- 2 cups milk shopping list
- 2 lb. monterey jack cheese, shredded shopping list
- 24 flour tortillas shopping list
How to make it
- Cook bacon in large heavy skillet over hot coals until crisp; drain, reserving drippings.
- Set bacon aside.
- Brown potatoes in a small amount of reserved drippings in skillet; remove potatoes and set aside.
- Heat desired amount of reserved drippings in skillet.
- Beat eggs with milk in bowl.
- Add to skillet.
- Cook until eggs are set, stirring frequently.
- Add bacon, potatoes and cheese.
- Cook until cheese melts, stirring constantly.
- Spoon onto tortillas; roll to enclose filling.
- Place on plates.
- Serve with salsa.
- NOTE; Alot of times I cut this recipe in half if there aren't that many of us.
