Campfire Bacon And Egg Burritos Recipe
This is a breakfast dish I make when we go camping....the grandsons love it!

Ingredients
  • 3 lbs. bacon, chopped
  • 3 (16-oz.) cans potatoes, drained, sliced
  • 24-eggs, beaten
  • 2 cups milk
  • 2 lb. Monterey Jack cheese, shredded
  • 24 flour tortillas

Directions
  1. Cook bacon in large heavy skillet over hot coals until crisp; drain, reserving drippings.
  2. Set bacon aside.
  3. Brown potatoes in a small amount of reserved drippings in skillet; remove potatoes and set aside.
  4. Heat desired amount of reserved drippings in skillet.
  5. Beat eggs with milk in bowl.
  6. Add to skillet.
  7. Cook until eggs are set, stirring frequently.
  8. Add bacon, potatoes and cheese.
  9. Cook until cheese melts, stirring constantly.
  10. Spoon onto tortillas; roll to enclose filling.
  11. Place on plates.
  12. Serve with salsa.
  13. NOTE; Alot of times I cut this recipe in half if there aren't that many of us.
