Pineapple and Coconut Rum Crush

- 1 pineapple shopping list
- 2 Tbsp. lemon juice shopping list
- 1 cup coconut milk shopping list
- 2/3 cup heavy cream shopping list
- 1 cup light rum shopping list
- 2-4 Tbsp. superfine sugar shopping list
- 1 1/4 lb. finely crushed ice shopping list
How to make it
- Trim off ends of pineapple and cut off skin. Cut away core and chop up flesh. Put inf blender or food processor with lemon juice and blend till very smooth.
- Add coconut milk, cream, rum and 2 Tbsp. of sugar. Blend till thoroughly combined, then taste and add more sugar if needed. Pack ice into glass and pour drink over. Serve immediately.
