Lemon Bursts

- 2 cups butter, softened(no substitutions recommended) shopping list
- 1 1/2 cups powdered sugar shopping list
- juice from 1 large lemon shopping list
- 1t lemon zest shopping list
- 4 cups flour shopping list
- assorted "all fruit" preserves(ie blueberry, orange, raspberry, etc) shopping list
- finely crushed pecans(optional) shopping list
How to make it
- In stand mixer, beat butter and sugar until fluffy.
- Add lemon juice and zest and beat well.
- Slowly add flour until combined.
- Chill for about 2 hours.
- Shape into 1 inch balls and roll in crushed pecans, if desired.
- Place on baking sheet or stone about 1 inch apart.
- Press indentation with thumb in center of each ball, and fill with tsp of preserves.
- Bake at 350 for about 15 minutes until lightly browned.
- **These cookies are sometimes difficult to judge doneness, so I suggest baking them for 15-17 minutes and let cool completely on cookie sheet or stone.**
