How to make it

  • In stand mixer, beat butter and sugar until fluffy.
  • Add lemon juice and zest and beat well.
  • Slowly add flour until combined.
  • Chill for about 2 hours.
  • Shape into 1 inch balls and roll in crushed pecans, if desired.
  • Place on baking sheet or stone about 1 inch apart.
  • Press indentation with thumb in center of each ball, and fill with tsp of preserves.
  • Bake at 350 for about 15 minutes until lightly browned.
  • **These cookies are sometimes difficult to judge doneness, so I suggest baking them for 15-17 minutes and let cool completely on cookie sheet or stone.**
