  • Ingredients:
  • SOUP”
  • 1 large organic Leek trimmed and well cleaned
  • 3 Organic fennel bulbs ferns removed cleaned and chopped
  • 1 large organic onion peeled and chopped
  • 2 quarts of Organic home made vegetable broth
  • 6 organic tarragon leaves
  • 6 organic basil leaves
  • 1 pint of organic heavy cream
  • A hand full of organic parsley
  • Sea salt and fresh ground white pepper to taste
  • CURRIED CAULIFLOWER:
  • 1 head of organic cauliflower trimmed and sliced into ½ inch pieces
  • 1½ cups of Organic corn meal
  • ½ teaspoon of sea salt
  • ½ teaspoon of organic cayenne pepper
  • ¼ teaspoon of organic turmeric
  • Oil for frying

Directions
  1. For the Curried Cauliflower:
  2. Combine the Cayenne pepper, sea salt, turmeric and the corn meal
  3. Wash the cauliflower but do not dry.
  4. In a large bowl, add cornmeal mix to cauliflower and mix to coat.
  5. In a large fryer, place enough oil and heat to medium high.
  6. Add the cauliflower and fry until golden and remove to a wire wrack to drain, set aside
  7. In a large pot start by sautéing the vegetables in some organic Butter or Olive oil until wilted
  8. Add the vegetable broth and a few tarragon leaves then bring to a boil
  9. Lower heat and add the heavy cream and reduce to thicken to your liking
  10. Ladle the cooked vegetables to food processor and blend until smooth
  11. Transfer back to the pot add the parsley and keep warm.
  12. Ladle soup into bowls and top with curried cauliflower and garnish with a few tarragon leaves
  13. Enjoy
