How to make it

  • Heat oil, soy sauce, red pepper flakes and lime juice in wok or large stir fry pan.
  • Add garlic and leek and cook until just tender, about 1-2 minutes
  • Add spinach, water chestnuts and roasted red pepper, stir fry another couple of minutes until spinach is tender.
  • Toss with another squirt of lime juice and black pepper before serving.
