Salmon with Cucumber Salad and Dill Sauce

- 6 tbl fat-free sour cream shopping list
- 2 Tbl plus 1 tsp finely chopped dill, divided shopping list
- 3 Tbl rice vinegar, divided shopping list
- 1 1/2 Tbl finely chopped shallots shopping list
- 1/4 tsp grated lemon rind shopping list
- 2 tsp fresh lemon juice shopping list
- 1 garlic clove, minced shopping list
- 4 (6 ounce) salmon fillets (about an inch thick) shopping list
- 1/4 tsp salt shopping list
- 1/4 tsp freshly ground black pepper shopping list
- olive oil shopping list
- 1/4 C dry white wine shopping list
- 1 english cucumber (about 1 lb) shopping list
How to make it
- Combine sour cream. 2 Tbl dill, 2 Tbl rice vinegar, shallots, rind, juice and garlic in a bowl , stirringwell; cover and chill
- Sprinkle fish evenly with salt and pepper
- Heat a large non-stick skillet ver medium high and coat pan with a small amount of olive oil
- Add fish to pan and cook for 5 minutes
- Turn fish over and cook an additional 3 minutes
- Remove from heat
- Add wine; cover and let stand 3 minutes until fish sflakes easily with a fork or it reaches preferred doneness
- While fish is standing
- Use a vegetable peeler and shave cucumber lengthwise into ribbons to yield about 2 cups
- Combine cucumber with remaining 1 Tbl rice vinegar and dill in a bowl; toss gently to coat
- Place about 1/2 cup cucumber mixture on each of four plates; top with a fillet and 2 Tbl of sour cream mixture
