Bettys Strawberry Pie

- One low-fat graham cracker crust or your homemade crust shopping list
- 1 12-oz diet lemon-lime soda shopping list
- 3 rounded Tablespoons cornstarch shopping list
- One 3-oz box sugar-free gelatin shopping list
- One quart sliced strawberries, fresh or frozen with no added sugar shopping list
- fat-free whipped topping (opt) shopping list
How to make it
- IIn medium-sized saucepan, pour in soda and stir in cornstarch. Boil until mixture is clearer than it was at first. I use a whip to thoroughly mix the cornstarch into the soda.
- When clear enough, add gelatin (dry) and stir or whip into mixture until dissolved. Cool mixture.
- Add sliced strawberries, stir to coat, and pour into pie crust. Refrigerate 3-4 hours until set.
- Top with whipped topping if desired.
- A nice change to use fresh peaches with lemon gelatin.
