How to make it

  • In mixing bowl, stir tog. biscuit mix, cheese and pepper.
  • Stir in beaten eggs just till mixture is moistened.
  • Fold in zucchini.
  • In a 10-inch skillet, melt butter over medium heat. Using 2 Tbsp mixture for each round, cook four rounds at a time about 2 to 3 minutes on each side, or till brown.
  • Keep warm while cooking remaining rounds.
  • Makes about 12 rounds.

    These are great we have been eating them for years, you can also use pancake mix instead of bisquick

    Sounds great! Will give this a try - I have wheat free biscuit mix in the pantry and plenty of zucchini in the garden!

    When you say biscuit mix, do you mean Bisquick????
    I just recently "discovered" Bisquick thanks to Michellem and her Summer Quiche recipe. Which I am eating as I write. Anyhow, Bisquick is so diverse and easy to use. Can't wait to try your zucchini rounds.

    Thanks for posting a great recipe! I love zucchine and/or yellow squash sliced and dipped in a batter and fried and these have to be just as good, and a little easier, because sometimes I have trouble keeping the batter on my slices.
