How to make it
- In mixing bowl, stir tog. biscuit mix, cheese and pepper.
- Stir in beaten eggs just till mixture is moistened.
- Fold in zucchini.
- In a 10-inch skillet, melt butter over medium heat. Using 2 Tbsp mixture for each round, cook four rounds at a time about 2 to 3 minutes on each side, or till brown.
- Keep warm while cooking remaining rounds.
- Makes about 12 rounds.

Thanks for posting a great recipe! I love zucchine and/or yellow squash sliced and dipped in a batter and fried and these have to be just as good, and a little easier, because sometimes I have trouble keeping the batter on my slices.grandmacooks in Somewhere In loved it
