Chunky Peanut Brittle

- 1 1/2 tsp. plus 1 1/2 cups butter, divided shopping list
- 2 cups peanut butter chips, divided shopping list
- 1 3/4 cups sugar shopping list
- 3 Tbsp. light corn syrup shopping list
- 3 Tbsp. water shopping list
- 1 1/2 cups salted peanuts, coarsely chopped shopping list
- 1/2 cups semi-sweet chocolate chips shopping list
How to make it
- Butter the sides and bottom of a 15x10x1-in. baking pan with 1 1/2 tsp. butter.
- Sprinkle with 1 cup peanut butter chips; set aside.
- In a heavy saucepan, bring the suagr, corn syrup, water and remaining butter to a boil over medium heat, stirring constantly.
- Cook and stir until the butter is melted.
- Cook, without stirring, until a candy thermometer reads 300 degrees (hard-crack stage).
- Remove from heat; stir in peanuts.
- Quickly pour onto prepared baking pan; sprinkle with chocolate chips and remaining peanut butter chips.
- With a knife, gently swirl softened chips over top of brittle.
- Cool; break into pieces.
- Store brittle in an airtight container.
