Chicken Alla Maddalena Recipe
Wonderful herbal chicken recipe, delcious with roasted new potatoes and parsley butter. Easy to do in electric skillet.

Ingredients
  • olive oil
  • 1/2 large white onion diced (or two fat leeks white part only)
  • 2 ribs of celery diced, leaves included
  • 1 bunch of flat leaf parsley chopped
  • 2 garlic cloves chopped
  • 1 cut up chicken, salted and peppered
  • 2 bay leaves
  • 3/4 cup of dry white wine
  • 1/4 cup of heavy cream

Directions
  1. In a skillet, heat a little olive oil.
  2. Add onion,parsley, celery and garlic.
  3. Brown the veggies and then add the chick that has has been washed, dried and cut into serving pieces.
  4. Continue browning until the chicken is a deep golden color.
  5. Add the bay leaves and the wine, sprinkling the wine over the chicken.
  6. When the wine evaporates a little, add a little water, lower the fire and cover the skillet and cook 35 minutes.
  7. Stir in the cream and cook very low another 10 minutes or so.
  8. Place on warm serving platter and garnish with fresh parsley, and serve with well browned roasted new potatoes.
