Chicken Alla Maddalena

                    - olive oil shopping list
- 1/2 large white onion diced (or two fat leeks white part only) shopping list
- 2 ribs of celery diced, leaves included shopping list
- 1 bunch of flat leaf parsley chopped shopping list
- 2 garlic cloves chopped shopping list
- 1 cut up chicken, salted and peppered shopping list
- 2 bay leaves shopping list
- 3/4 cup of dry white wine shopping list
- 1/4 cup of heavy cream shopping list
How to make it 
                    - In a skillet, heat a little olive oil.
- Add onion,parsley, celery and garlic.
- Brown the veggies and then add the chick that has has been washed, dried and cut into serving pieces.
- Continue browning until the chicken is a deep golden color.
- Add the bay leaves and the wine, sprinkling the wine over the chicken.
- When the wine evaporates a little, add a little water, lower the fire and cover the skillet and cook 35 minutes.
- Stir in the cream and cook very low another 10 minutes or so.
- Place on warm serving platter and garnish with fresh parsley, and serve with well browned roasted new potatoes.
