How to make it

  • In a skillet, heat a little olive oil.
  • Add onion,parsley, celery and garlic.
  • Brown the veggies and then add the chick that has has been washed, dried and cut into serving pieces.
  • Continue browning until the chicken is a deep golden color.
  • Add the bay leaves and the wine, sprinkling the wine over the chicken.
  • When the wine evaporates a little, add a little water, lower the fire and cover the skillet and cook 35 minutes.
  • Stir in the cream and cook very low another 10 minutes or so.
  • Place on warm serving platter and garnish with fresh parsley, and serve with well browned roasted new potatoes.
