This is how I grew up making Mexican rice. Yum. You may easily halve the recipe but i like to use leftovers for making stuffed peppers.

I made this today to go with Chicken Nacho Bake, a recipe from this site! It was perfect with this! I made this exactly as written. I used low sodium chicken broth, so I had to add extra salt. This was very easy and very tasty! Whenever I make the Chicken Nacho Bake, I'll make this to go with it! Great recipe! I added a photo. :)

Very good and has tons of flavor! I used yellow rice cause that's what I had on hand. I love the peas in this and have never had Mexican rice with peas before! Added a pic. and sorry about it being so dark...my flash wasn't working and it was a crummy dark day :)
