Lauras Italian Sausage Soup

- 2 beef Boullion cubes shopping list
- 1 lb bulk Italian sausage shopping list
- 1 lb spicy bulk Italian sausage (or use all spicey if you prefer) shopping list
- 2-3 carrots - chopped shopping list
- 2 Stalks of celery - chopped shopping list
- 1/2 head of Cabage - shredded shopping list
- 1 large onion - chopped shopping list
- 3 -5 cloves chopped garlic shopping list
- 1 large zucchini - chopped shopping list
- 1/2 buch Italian parsley - chopped shopping list
- 4 oz can tomato sauce shopping list
- 1 can Northern beans - drained and rinsed shopping list
- 1-1/4 cups uncooded ditalini (small tubed pasta) shopping list
How to make it
- Fill a large stock pot about 1/2 way and bring to a boil. Don't over fill it 'cause there's a lot of stuff going in later.
- Add the boullion cubes to the boiling water.
- In a frypan cook the regular and hot Italian Sausage in a bit of olive oil.
- Add cooked Sausage to the boiling Water.
- Add carrots, celery, onions and garlic. Return pot to a slow boil.
- Cook until veggies are al dente. (don't over cook because they'll be in there a bit longer)
- Add zucchini, parsley and cabbage and tomato sauce
- Simmer ~ 90 minutes
- While simmering, cook the Ditalini in a separate pot
- Add cooked Ditalini and Northern Beans and heat through.
- Serve with crusty bread
