Depression Cakes Recipe
These were common during the depression in North America. My mother used to make these little treats occassionally when I was a kid, and I still can remember seeing them on the wax paper sheets cooling on the kitchen table.

Ingredients
  • 2 cups white sugar
  • 4 tbsp cocoa
  • 8 tbsp water
  • -
  • 1 loaf unsliced stale bread (the staler, the better)
  • shredded coconut

Directions
  1. Boil and stir the first 3 ingredients for about 5 minutes.
  2. Thickly slice the bread (about 1 inch) and remove the crusts
  3. Cut each slice into 1 inch cubic fingers
  4. Use a fork to dip each bread finger into the chocolate mixture.
  5. Roll each finger in the coconut.
  6. Place on waxed paper to cool.
  7. -
  8. You will not be able to tell it's bread, if you didn't know already.

Uh-huh -- the depression era...... It was truly amazing how people who were so LIMITED in what foodstuffs they were allowed to have how they made what was available taste great.
