Lamb cubes and veggies marinated in a simple and classic flavors. The longer they are able to marinate, the better and they are best, grilled.

Ingredients
  • Kabobs:
  • 3lb lamb, cubed
  • 2 bell peppers, cut into about 1-2 inch pieces
  • 1 red onion, wedged
  • 1lb whole fresh mushrooms
  • 1pt cherry tomatoes
  • Marinade:
  • 1 1/2 cups good olive oil
  • juice from 4-5 lemons to yield about 1/2-3/4 cup
  • 3-4T fresh rosemary, chopped
  • 1T dry minced onion(or 2T fresh)
  • 2 cloves garlic, chopped
  • salt and fresh ground pepper

Directions
  1. Add all marinade ingredients to large zipper bag and mix in bag to combine.
  2. Add lamb and toss to coat.
  3. Refrigerate tightly zipped for a few hours, turning occasionally.
  4. Skewer meat and veggies alternately and grill for about 15 minutes until vegetables are tender and lamb will be at about a medium doneness.

Hi Keni, This is great. Very Middle Eastern. All the flavors I am used to. For a variation, try using mint instead of or along with the rosemary. Nice Recipe .......;-)~ Jim

Okay, might be a silly ? but the directions don't say to add the veggies to the marinade - just the lamb. I'm assuming the veggies go in too, but you know what happens when you assume. :)
