How to make it

  • Slice zuccinni in 1/2 lengthwise and scoop out inside, reserving the squash you scooped out.
  • Place zuccinni shells, hallow side up, on an ungreased cookie sheet.
  • Cube zuccinni (the reserved stuff), and mix with remaining ingredients, EXCEPT cheese.
  • Fill hallowed zuccinni shells with filling.
  • Bake at 375 degrees for a bout 15 minutes, or until mixture is bubbly.
  • Sprinkle cheese over mixture and return to oven for about 5-10 minutes, or until cheese is melted.

    I just made this recipe and it was very tasty! My zucchini was exceptionally HUGE, so I actually diced up a small one to add to the filling. I also had to increase the cooking time, again due to the enormous zucchini I started with. Thanks for a keeper. DH said it was delicious, and he doesn't exactly crave his veggies!

    Nice recipe. I have done this with hamburger but not chicken.
