Ingredients
  • 1 lg. zuccinni
  • 1 med. banana pepper
  • 1 10.5 oz can cream of chicken soup
  • 1 c. cooked chicken, shredded
  • 1 c. shredded colby cheese

Directions
  1. Slice zuccinni in 1/2 lengthwise and scoop out inside, reserving the squash you scooped out.
  2. Place zuccinni shells, hallow side up, on an ungreased cookie sheet.
  3. Cube zuccinni (the reserved stuff), and mix with remaining ingredients, EXCEPT cheese.
  4. Fill hallowed zuccinni shells with filling.
  5. Bake at 375 degrees for a bout 15 minutes, or until mixture is bubbly.
  6. Sprinkle cheese over mixture and return to oven for about 5-10 minutes, or until cheese is melted.

I just made this recipe and it was very tasty! My zucchini was exceptionally HUGE, so I actually diced up a small one to add to the filling. I also had to increase the cooking time, again due to the enormous zucchini I started with. Thanks for a keeper. DH said it was delicious, and he doesn't exactly crave his veggies!
