Fish On A Stick Recipe
A great appetizer! Easy and deliciously crunchy! These are great for those upcoming tailgate parties! Serve with a bowl of lemon slices on the side and your favorite dipping sauce.

Ingredients
  • 2 lbs fish fillets.
  • Batter:
  • 1 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1 tablespoon garlic salt
  • 1 tablespoon creole spice
  • 1 tablespoon vegetable oil
  • 1/4 cup ice water, more if needed
  • Wooden skewers

Directions
  1. Heat the oil to 190C/375F in large skillet or deep fryer.
  2. Rinse and dry the fish fillets.
  3. Slice fillets lengthwise into thin strips
  4. Season with salt and pepper.
  5. Slide fish strips or thread onto Skewers
  6. Combine all the ingredients in a blender or you can do by hand using a whisk.
  7. When batter is smooth and well mixed, transfer to a bowl, cover, and refrigerate for 20 to 30 minutes.
  8. The batter will thicken as it stands so you may need to add a little bit more ice water to the batter to get the desired thickness.
  9. Dip fillets in batter , making sure all sides are coated.
  10. Fry in hot oil until brown and flaky(about 4 to 5 minutes)
