Fish on a stick

- 2 lbs fish fillets. shopping list
- Batter: shopping list
- 1 cup all purpose flour shopping list
- 1/2 teaspoon baking powder shopping list
- 1 tablespoon garlic salt shopping list
- 1 tablespoon creole spice shopping list
- 1 tablespoon vegetable oil shopping list
- 1/4 cup ice water, more if needed shopping list
- wooden skewers shopping list
How to make it
- Heat the oil to 190C/375F in large skillet or deep fryer.
- Rinse and dry the fish fillets.
- Slice fillets lengthwise into thin strips
- Season with salt and pepper.
- Slide fish strips or thread onto Skewers
- Combine all the ingredients in a blender or you can do by hand using a whisk.
- When batter is smooth and well mixed, transfer to a bowl, cover, and refrigerate for 20 to 30 minutes.
- The batter will thicken as it stands so you may need to add a little bit more ice water to the batter to get the desired thickness.
- Dip fillets in batter , making sure all sides are coated.
- Fry in hot oil until brown and flaky(about 4 to 5 minutes)
