How to make it

  • Heat the oil to 190C/375F in large skillet or deep fryer.
  • Rinse and dry the fish fillets.
  • Slice fillets lengthwise into thin strips
  • Season with salt and pepper.
  • Slide fish strips or thread onto Skewers
  • Combine all the ingredients in a blender or you can do by hand using a whisk.
  • When batter is smooth and well mixed, transfer to a bowl, cover, and refrigerate for 20 to 30 minutes.
  • The batter will thicken as it stands so you may need to add a little bit more ice water to the batter to get the desired thickness.
  • Dip fillets in batter , making sure all sides are coated.
  • Fry in hot oil until brown and flaky(about 4 to 5 minutes)
