Lobster Salad

Lobster is expensive but come summer,is a worthy splurge. Frsh lobster should ave a sweetness which is accented with touch of citrus and salt.

Steam lobster about 7-8 mins. Cut into bite size pieces,place in medium bowl and add remaining ingredients;mix well. Can be served over a bed of greens or inside half a papaya. Or spoon some on a toasted roll.

Oh! You have my mouth watering...we haven't splurge on lobster yet this summer, but I see some coming my way next trip to Costco - this is just too delicious sounding to pass by!

What a great balance between sweet, salty and citrus! I agree with Modelsmom, I'd give it a six if I could! And easy to boot!!

Ohhhh LeClare! I can just SEE me eating some of this lovely stuff with a tall cold glass of lemony tea...out they-ah on the verandah, Sug-ah! (Ok that was my best southern girl accent for ya!)

This sounds delicious and who knew it was easy?
