Where Did The Rum Go Cake Recipe
A single-layer, quick and vegan cake that I made to turn into the now infamous "cake balls". I wanted the flavours to be strong enough to compete with the dark chocolate I have covering them.

Ingredients
  • 1 cup whole wheat pastry flour
  • 1/2 cup flour
  • 3/4 cup raw cane sugar
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup water (you can use soy milk)
  • 1/4 cup oil
  • 1 tbsp cider vinegar
  • 1/2 tbsp coconut extract
  • 1/2 tbsp rum extract

Directions
  1. Preheat oven to 350F. Grease an 8" cake pan.
  2. Mix dry ingredients together in a large bowl.
  3. Combine remaining ingredients in another bowl, add to the dry mix and beat well (using electric beaters for 2 minutes or by hand for about 4 - you want it totally smooth).
  4. Bake for 35 minutes.
