TUTTI FRUTTI PRESERVES Recipe
Makes 9 (6 oz.) glasses. I use the jelly canning jars. We love this stuff around my house!

Ingredients
  • 3 c. chopped pears
  • 1 lg. orange, seeded and chopped
  • 1/2 c. maraschino cherries
  • 3/4 c. drained crushed pineapple
  • 1/2 c. lemon juice
  • 1/2 c. chopped nuts
  • 1 c. coconut
  • 5 c. sugar
  • 1 pkg. powdered pectin

Directions
  1. Mix pears, orange, cherries, pineapple, lemon juice, nuts, coconut.
  2. Cook over high heat, stirring constantly, until the fruit mixture
  3. comes to a full boil.
  4. Add the sugar, stirring constantly and boil hard for 1 minute. Remove from heat and add the pectin.
  5. Skim and stir for 5 minutes. Pour into hot containers and seal at once.
  6. 9 (6 oz.) glasses.

I thought the whole idea behind the way pectin works is to activate it by boiling for one minute at high boil in with the fruit.
