  • Zest of 4 limes
  • 3 Cups of light rum
  • 1-1/2 Cups of superfine granulated sugar

Directions
  1. Blot zest with paper towel to remove any excess natural oils.

  3. Add 2 cups of the rum. Close jar and store in a cool, dark place for 2 days, or until rum has absorbed the flavor and color of the peel.
  4. Strain peel from rum, put strained rum back into the jar and add sugar; shaking vigorously until sugar has dissolved.
  5. Add remaining one cup of rum and stir until rum is once again clear.
  6. Close jar and store in cool, dry place for one week to age.
