Southern Mountains Potato Salad

- Southern Mountains Potato Salad shopping list
- 6 russet potatoes, large - cooked, peeled and diced shopping list
- 4 eggs - hardboiled, peeled, and chopped shopping list
- 1/2 cup celery - diced shopping list
- 1 onions, medium - peeled, and minced shopping list
- 1/2 cup mayonnaise (a good brand please) :) shopping list
- 1/4 cup pimento - diced shopping list
- 1/4 cup sweet pickle relish shopping list
- 1- 1/2 tablespoon prepared mustard shopping list
- 1 teaspoon celery salt shopping list
- 1 teaspoons sugar shopping list
- 1/3 cup stuffed green olives - chopped (optional) shopping list
- salt & pepper (if needed) shopping list
How to make it
- Peel and dice the potatoes, cook, and cool.
- Hard boil the eggs, and cool, peel and chop.
- Peel onions chop fine.
- Dice celery fine.
- Combine the first 4 ingredients in a serving bowl, cover and refrigerate while preparing the rest of the ingredients for the dressing.
- Blend the mayo, pickle relish, pimento, mustard, celery salt and sugar together.
- Then pour over the potato mixture and toss.
- Taste- Salt & pepper if needed.
- Cover the salad and refrigerate for at least 1-2 hours for flavors to blend.
- May garnish with olives, boiled egg, and fresh sprigs of parsley.
