Louisiana Crawfish Balls Recipe
This'll put some hair on your tongue. Honestly it's simple EASY and can be adapted with just about any recipe. The Crawfish can be substituted with Shrimp or those huge Prawns, or even Chicken.

Ingredients
  • 1/2 pound Crawfish (Shrimp, Prawns OK) - cooked cleaned and finely chopped.
  • 2 tablespoons lightly salted Butter or Margarine.
  • 2 tablespoons chopped Parsley.
  • 2 tablespoons chopped green onions.
  • 2 tablespoons Whole Wheat Flour (white flour just doesn't do it for me).
  • 2 Egg Whites (Egg substitute NOT OK).
  • 1/3 cup regular whole milk.
  • 1/2 teaspoon sea salt.
  • 1/4 teaspoon Hot Sauce (try "Footy's" chicken wing sauce).
  • Sunflower oil, for deep frying.
  • Bread crumbs, for coating outside of balls.

Directions
  1. In medium saucepan, melt butter and add Parsley, Green Onions. Saute' for 1 minute.
  2. Blend in Flour.
  3. Stir in Milk, seasoning and Hot sauce.
  4. Cook, stirring constantly, until mixture thickens (reduces) and comes to a boil.
  5. Remove from heat and stir in Crawfish.
  6. Scoop up mixture using a tablespoon and form into balls. Mixture will be a gooey mess, so use both hands.
  7. Place balls on WAXPAPER.
  8. Beat egg whites until well mixed, DON'T beat them into Mayonaisse.
  9. Dip balls into bread crumbs, then into egg whites, then into bread crumbs again.
  10. Chill for 30 minutes in refrigerator.
  11. Fill large saucepan or Deep Fryer to mid level with Sunflower oil and heat to 350 degrees. Test it by dropping a drop or 2 of water into hot oil.
  12. BE VERY CAREFUL.
  13. Fry a few balls at a time, until they are Golden Brown (approx. 2 or 3 minutes).
  14. Store cooked balls in paper towel covered bowl in cold oven while frying remaining balls.
  15. Enjoy.

Hey, never heard of Footy's before but there are many others that would work! I like Crystal's myself being from Louisiana! I would probably use some chopped onions and bell pepper in these and some creole spice to booth for that extra kick! Sounds like a good recipe you have! Thanks for sharing! Deb

My Family misses 'Crayfish'....because we live in Southern California...so I will just have to "make-do" with Shrimp....Yes...I know that I can have Crayfish shipped in 'dry ice'....but...I will have to do this for a "Special" occasion....until then, Shrimp it will have to be.
