Lemon Lime Bars

- CRUST: shopping list
- 1 Cup butter, softened shopping list
- 1/2 Cup confectioners sugar shopping list
- 2 Tsps. grated lime peel (i use 2 whole grated limes) shopping list
- 1 3/4 cups all-purpose flour shopping list
- 1/4 Tsps salt shopping list
- FILLING: shopping list
- 4 Large eggs shopping list
- 1 1/2 cup sugar shopping list
- 1/4 Cup all-purpose flour shopping list
- 1/2 Tsp. baking powder shopping list
- 1/3 cup lemon juice shopping list
- 2 Tsps grated lemon peel ( also use 2 whole grated lemons) shopping list
- Confectioners sugar shopping list
How to make it
- In a mixing bowl, cream butter and confectioners sugar.
- Add lime peel; mix well. Combine flour and salt; gradually add to cream mixture.
- Press into a greased 13in x 9in x 2in baking pan.
- Bake at 350 for 13-15mins. or just until edges are slightly browned.
- Meanwhile, in a mixing bowl, beat eggs and sugar. Combine the flour and baking powder.
- Add to egg mixture with lemon juice and peel; beat until frothy.
- Pour over hot crust.
- Bake for 20-25mins or until light golden brown. Cool on wire rack. Dust with confectioners sugar. Cut into squares. Store in refrigerator.
- **I find that the cooking time varies on both the crust and the filling. It usually takes a few minutes longer than recommended.
- **The easy way of cutting these bars, refrigerate before cutting.
- **Also, the recipe serving varies on how big you cut the bars ;o)
