Lemon Lime Bars Recipe

Ingredients

CRUST:

1 Cup butter, softened

1/2 Cup confectioners Sugar

2 Tsps. grated lime peel (i use 2 whole grated limes)

1 3/4 cups all-purpose flour

1/4 Tsps Salt

FILLING:

4 Large Eggs

1 1/2 cup Sugar

1/4 Cup all-purpose flour

1/2 Tsp. baking powder

1/3 cup lemon juice

2 Tsps grated lemon peel ( also use 2 whole grated lemons)

Confectioners Sugar

Directions

In a mixing bowl, cream butter and confectioners sugar.

Add lime peel; mix well. Combine flour and salt; gradually add to cream mixture.

Press into a greased 13in x 9in x 2in baking pan.

Bake at 350 for 13-15mins. or just until edges are slightly browned.

Meanwhile, in a mixing bowl, beat eggs and sugar. Combine the flour and baking powder.

Add to egg mixture with lemon juice and peel; beat until frothy.

Pour over hot crust.

Bake for 20-25mins or until light golden brown. Cool on wire rack. Dust with confectioners sugar. Cut into squares. Store in refrigerator.

**I find that the cooking time varies on both the crust and the filling. It usually takes a few minutes longer than recommended.

**The easy way of cutting these bars, refrigerate before cutting.

**Also, the recipe serving varies on how big you cut the bars ;o)

I use the big limes (green ones) not the little key limes. I had to specify on the color bc my boyfriend (who is from El Paso) calls lemons, limes. So i never know, HA!
