Whole family Loves this recipe! Spicy chicken cooked in a skillet with orange juice or grilled w/o the o.j. Also great with london broil.

Ingredients
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon Hungarian hot paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon brown sugar or sugar
  • 4 boneless, skinless chicken breast halves(or thighs)
  • 1 tablespoon vegetable or olive oil
  • 1/2 cup orange juice( or chicken broth)

Directions
  1. Combine first 6 ingredients in a bowl. Stir to blend evenly. Sprinkle on chicken,coating the chicken evenly, using all of the spice mix.
  2. In a skillet large enough to hold all the chicken in a single layer, heat oil to medium-high. Add chicken and cook about 4 minutes. Turn chicken, lower heat to medium-low and add orange juice or broth. Simmer about 7 minutes or until chicken is done throughout
  3. If the liquid boils out before chicken is done, add a little water or broth. There should be enough juice left to serve a couple teaspoons over each piece of chicken.
