Glazed Blueberry Pound Cake

- 13/4c flour plus 2 Tbs shopping list
- 1tsp baking powder shopping list
- 1/4tsp salt shopping list
- 1/4 tsp cinnamon shopping list
- 3/4c(11/2 sticks)butter shopping list
- 1c sugar shopping list
- 3 eggs shopping list
- 1/2 tsp lemon juice shopping list
- 1/2c apple juice plus 2Tbs shopping list
- 11/2c blueberries shopping list
- 2/3c powdered sugar shopping list
How to make it
- Preheat oven to 350. Coat a loaf pan with cooking spray.
- In a med. bowl,whisk together 13/4c flour,baking powder,salt and cinnamon. Set aside.
- In a lg. bowl,use electric mixer to cream butter and sugar till light and fluffy.. One at a time with mixer on low,add the eggs and mix well. Add the lemon juice and 1/2c apple juice,mix well.
- Add the dry ingredients and mix on low till just mixed.
- Place the blueberries in a med. bowl and dust with remaining 2Tbs flour,toss to coat evenly. Add the berries to the batter,discarding excess flour that does not adhere to berries.
- Use a ruber spatula to gently fold berries into the batter. Transfer the batter to prepared loaf pan. Bake 50-60 mins. or till toothpick comes out clean.
- Cool the cake in the pan 15 mins,then remove and cool on rack for 1 hour.
- When ready to serve cut into thick slices and arrange on platter.
- In a small bowl,whisk together the powdered sugar and remaining 2Tbs. of apple juice. Drizzle over slices.
