Haddock Fish Fillets With Wine Sauce Dated 1943 Recipe
HADDOCK FISH FILLETS WITH WINE SAUCE DATED 1943 This recipe came from an estate sale. I obtained it when I purchased the family collection from the Edmonds Estate in Canton, Texas in 1987.

Ingredients
  • 2 tablespoons minced onion
  • 1 tablespoon oil
  • 2 tablespoons flour
  • 1-1/2 teaspoons salt
  • 1/8 teaspoon pepper
  • 1/2 cup cream
  • 1/2 cup sauterne wine
  • 1 pound fresh haddock fillets
  • 1 tablespoon chopped fresh parsley

Directions
  1. Sauté onion in hot oil in a heavy enameled pan or double boiler until tender.
  2. Stir in the flour, salt, and pepper blending well.
  3. Add milk stirring constantly and cook until thick.
  4. When thickened remove and very gradually stir in the wine.
  5. Put the fish in a baking pan and sprinkle with salt.
  6. Pour sauce over fish.
  7. Bake at 350 for thirty minutes basting often.
  8. Sprinkle with parsley and serve.
