How to make it

  • Sauté onion in hot oil in a heavy enameled pan or double boiler until tender.
  • Stir in the flour, salt, and pepper blending well.
  • Add milk stirring constantly and cook until thick.
  • When thickened remove and very gradually stir in the wine.
  • Put the fish in a baking pan and sprinkle with salt.
  • Pour sauce over fish.
  • Bake at 350 for thirty minutes basting often.
  • Sprinkle with parsley and serve.
