Here’s an ooey gooey main dish recipe for you…great for a winter’s evening! I add a little more parmesan cheese than the recipe calls for.

Ingredients
  • 8 ounces lasagna noodles
  • ½ cup chopped onion
  • ½ cup chopped bell pepper
  • 3 Tablespoons butter or margarine (I use butter only)
  • 1 can condensed cream of chicken soup
  • 1 (6-oz.) can sliced mushrooms, drained (I sauté lightly, fresh-sliced mushrooms)
  • ½ cup chopped pimiento, drained
  • 1/3 cup milk
  • ½ teaspoon dried basil, crushed
  • 1 ½ cups cream-style cottage cheese
  • 2 cups diced, cooked chicken
  • 2 cups shredded American cheese
  • ½ cup Parmesan cheese

Directions
  1. Cook noodles in boiling salted water according to package directions; drain.
  2. Cook onion and pepper in butter or margarine until tender.
  3. Stir in soup, mushrooms, pimiento, milk, and basil.
  4. Lay half the noodles in a 13x9x2-inch baking dish; top with half each the sauce, cottage cheese, chicken and American and Parmesan cheeses.
  5. Repeat layers except for last 2 cheeses.
  6. Bake in 350 degree oven for 45 minutes.
  7. Top with last of cheeses; bake 2 minutes more. Makes 8 to 10 servings
