How to make it

  • Heat EVOO in a medium sized pot over medium high heat
  • add margarine
  • add diced onion and pepper
  • Add kosher salt
  • saute until tender
  • add garlic
  • stir
  • add Quinoa and water
  • Bring to a boil
  • reduce to simmer
  • cover
  • cook 18 minutes
  • Once cooked, squeeze in juice of 1/2 small lemon
  • **mushrooms and green chilies are great in this recipe, too

    Hey this sounds pretty good though I have never heard of Quinoa other than described here. Where is it from? Any taste hints? I've got a really great natural foods/health store nearby where I could probably find it. Thx for any help

    Your sister is a great influence this recipe is wonderful. I make a similar recipe and stuff it into sweet bell peppers.
    I love Quinoa it comes in several verities of colors too.
