Quinoa side dish

- EVOO shopping list
- 1 Tbs margarine or butter shopping list
- 1/2 tsp kosher salt shopping list
- 1/4 yellow onion or shallots diced shopping list
- 1/2 yellow, red or green bell pepper, diced shopping list
- 2 garlic cloves, minced shopping list
- 1 cup quinoa shopping list
- 2 cups water (or chicken broth) shopping list
- lemon shopping list
How to make it
- Heat EVOO in a medium sized pot over medium high heat
- add margarine
- add diced onion and pepper
- Add kosher salt
- saute until tender
- add garlic
- stir
- add Quinoa and water
- Bring to a boil
- reduce to simmer
- cover
- cook 18 minutes
- Once cooked, squeeze in juice of 1/2 small lemon
- **mushrooms and green chilies are great in this recipe, too

Your sister is a great influence this recipe is wonderful. I make a similar recipe and stuff it into sweet bell peppers.
I love Quinoa it comes in several verities of colors too.
