Ingredients
  • Pupusas:
  • 4 cups all-purpose flour
  • 2 tsp salt
  • 2 tsp baking powder
  • 4 Tbsp shortening (not liquid oil)
  • 1 1/2 cups warm water (approx.)
  • 1/2 lb. shredded Muenster cheese
  • chopped green onion
  • Curtido:
  • 1 medium green cabbage, shredded
  • 1 large carrot, shredded
  • 3/4 cup apple cider vinegar
  • 1 cup water
  • 1 Tbsp salt
  • 1/2 tsp oregano
  • 1/2 tsp crushed red chili flakes

Directions
  1. Combine dry ingredients.
  2. Cut shortening into dry ingredients with pastry blender.
  3. Add warm water a few drops at a time and work dough with hands until manageable.
  4. Knead dough 15-20 times then allow to stand for 10 minutes.
  5. Form dough into balls the size of an egg; roll out one at a time until they are 6 inches in diameter.
  6. Add some of the cheese and green onion on top then put another layer of the tortilla.
  7. Place on a hot ungreased skillet (one at a time).
  8. Cook 2 minutes on each side or until done.
  9. Serve with spicy cabbage and shredded carrots on top.
  10. Curtido:
  11. Mix together vinegar, water, salt, oregano and chili.
  12. Put cabbage and carrot in a large bowl.
  13. Pour vinegar mixture over cabbage mixture.
  14. Toss to completely cover cabbage with vinegar mixture.
  15. Cover, chill overnight to blend flavors.
  16. Serve over pupusas.

Thank you for posting it, I love pupusas! I have just tried them last year, when my friend that lived for 5 years in El Salvador made them for me. They are awesome!
