Pupusas And Curtido

- Pupusas: shopping list
- 4 cups all-purpose flour shopping list
- 2 tsp salt shopping list
- 2 tsp baking powder shopping list
- 4 Tbsp shortening (not liquid oil) shopping list
- 1 1/2 cups warm water (approx.) shopping list
- 1/2 lb. shredded muenster cheese shopping list
- chopped green onion shopping list
- Curtido: shopping list
- 1 medium green cabbage, shredded shopping list
- 1 large carrot, shredded shopping list
- 3/4 cup apple cider vinegar shopping list
- 1 cup water shopping list
- 1 Tbsp salt shopping list
- 1/2 tsp oregano shopping list
- 1/2 tsp crushed red chili flakes shopping list
How to make it
- Combine dry ingredients.
- Cut shortening into dry ingredients with pastry blender.
- Add warm water a few drops at a time and work dough with hands until manageable.
- Knead dough 15-20 times then allow to stand for 10 minutes.
- Form dough into balls the size of an egg; roll out one at a time until they are 6 inches in diameter.
- Add some of the cheese and green onion on top then put another layer of the tortilla.
- Place on a hot ungreased skillet (one at a time).
- Cook 2 minutes on each side or until done.
- Serve with spicy cabbage and shredded carrots on top.
- Curtido:
- Mix together vinegar, water, salt, oregano and chili.
- Put cabbage and carrot in a large bowl.
- Pour vinegar mixture over cabbage mixture.
- Toss to completely cover cabbage with vinegar mixture.
- Cover, chill overnight to blend flavors.
- Serve over pupusas.

Thank you for posting it, I love pupusas! I have just tried them last year, when my friend that lived for 5 years in El Salvador made them for me. They are awesome!
