Chicken Spaghetti Casserole Recipe
This is a great way to use left over chicken! A great little casserole that is a nice family dinner. Just add a small dinner salad and some garlic bread and sit back and listen to the rave reviews!

Ingredients
  • 2 to 3 cups cubed cooked chicken(left overs are good here)
  • 1 cup chopped onions
  • 1 cup chopped celery
  • 1 can crushed tomatoes
  • 1 package spaghetti noodles, cooked and drained
  • 1 jar favorite spaghetti sauce without meat
  • 1 can black olives, sliced
  • 1 cup sliced or chopped mushrooms
  • 1/2 cup burgundy wine
  • 1 tablespoon minced garlic
  • 4 tablespoons butter
  • 8 oz. shredded cheddar cheese
  • creole spice ,such as Tony's, to taste
  • cracked black pepper to taste
  • sliced green onions

Directions
  1. Cook pasta, drain and set aside.
  2. In medium saucepan, saute onions, mushrooms, garlic, and celery in butter until tender.
  3. Stir in tomatoes, chicken, spaghetti sauce, black olives and wine and cook over med/low heat for 10 minutes.
  4. Stir in spaghetti and seasonings and mix well.
  5. Pour spaghetti into casserole dish.
  6. Top with cheese and green onions.
  7. Bake in preheated 350 degree oven for 15 to 20 minutes or until cheese is completely melted.
