Handed down to me from my father, these baked "stuffed" chops aren't really stuffed, but still delicious! The mushrooms, sherry, and cooking method make for a rich and wonderful dish! Certainly not low fat...so an occasional treat is best!... More

Ingredients
  • 6 boneless pork chops (not too thin)
  • 1/2 - 3/4 lb. sliced mushrooms
  • 1/4 cup butter
  • 1/4 cup sherry
  • medium onion, diced
  • flour
  • 2 cans cream of mushroom soup
  • 1 bag herb seasoned stuffing mix (pepperidge farm or arnold)
  • milk

Directions
  1. Pre heat oven to 375 F
  2. In a large pot, cook mushrooms & onion over med-low heat until soft & brown. Add wine; cook for a few minutes.
  3. Sprinkle flour until liquid is absorbed and continue cooking at low to medium heat for a couple more minutes. Add milk and scrape bottom of pan until it thickens into a sauce. (I usually eyeball this part...so add enough milk to make a sauce consistancy. Maybe about 5 oz.) Cook until thickened into sauce.
  4. Stir in 1 can cream of mushroom soup. Add stuffing mix to this mixture and coombine well. Cook for a few minutes, stirring occasionally, on low heat.
  5. In a skillet over med-high heat, brown chops in butter on both sides. (Yes, all that butter!) Do not cook them completely.
  6. Remove chops form pan and move them to a 13 x 9" baking dish that's been sprayed w/ cooking spray.
  7. Add water (about 1/2 cup) to pan drippings. Scrape up those yummy bits and let this reduce by half. Add the reduction to the stuffing mixture and combine well. Scoop out all the stuffing mixture onto each chop, covering them completely. (You'll have plenty of stuffing probably to cover the entire dish)
  8. Dilute last can of cream of mushroom soup w/ 1/2 can of milk. Heat on stove top & pour over each stuffing covered chop (use the full amount).
  9. Bake for 20 minutes or until done. Don't over cook your chops or they'll be dry.

Enjoy! I've used the 98% fat free mush soup and it's just as good!

Sounds really good. I'm earmarking this for winter when it's okay to put on a pound or two. My husband will LOVE it. You've got my five!

I just wanted to say that I've made this w/o mushrooms and couldn't believe the difference in taste. So, for those of you thinking of leaving them out, I don't recommend it. The mushrooms add an amazing amount of flavor!
