A delightful blend of herbs makes this dish a welcome main course. You may also substitute sea bass if you don't have halibut.

Ingredients
  • ¼ cup butter
  • 2 tsp finely chopped shallots, or fresh chives
  • 2 tsp finely chopped tarragon or dill
  • 2 tsp finely chopped fresh parsley
  • ½ tsp Dijon mustard
  • ½ tsp lemon
  • ¼ tsp crushed garlic
  • 4 fillets (6 0z) halibut or sea bass

Directions
  1. In small bowl, mix together the butter, shallots, tarragon, parsley, mustard, lemon juice and garlic until well combined.
  2. Broil the fish for 4 – 6 minutes per side, or until it flakes from the center with a fork.
  3. Spread about 1 tbsp of the spread mixture over each portion of fish.
  4. Garnish with a couple of sprigs of chives.
