Smoked Chicken Thighs Recipe
The recipe calls for boneless thighs, but I have used drumsticks and thighs (bone in) and increased the cooking time with the same delicious results!

Ingredients
  • 1/2 cup cider vinegar
  • 1/4 cup extra virgin olive oil
  • 3/4 tsp. Kosher salt
  • 2 cloves garlic, chopped
  • 1/4 cup shallot, chopped (about two medium)
  • 2 lbs. boneless, skinless chicken thighs
  • One smoking pouch (see below)

Directions
  1. Whisk vinegar, oil and salt in medium bowl. Stir in shallots and garlic. Add chicken and toss to coat. Cover and marinate in refrigerator 20 minutes to 3 hours.
  2. Make a smoking packet by soaking one cup of wood chips (either hickory or apple) in water for 30 minutes. Drain water off chips and put chips in a piece of aluminum foil. Fold foil over chips and seal tightly to make a packet. Punch six holes in the top of the packet.
  3. Preheat grill with packet on grill until packet is smoking
  4. Transfer chicken to grill allowing excess marinade to drain back into bowl. Discard remaining marinade.
  5. Grill chicken, turning once until cooked through, approximately 6 to 8 minutes on each side.

I like the sound of the sauce ... must try. Also, thanks much for the smoking method. I've tried smoking on my grill several times without much success. Your foil packet probably concentrates the smoke. It sound like I'd be able to position it or the meat for better coverage.
