Dijon Potato and Mushroom Salad

- 2lb potatoes(Yukon gold, new, or red work best) shopping list
- 6 oz fresh mushrooms, sliced shopping list
- 2 stalks celery, sliced shopping list
- 1 large, or 2 small bell peppers, sliced shopping list
- 2 green onions, sliced shopping list
- 1/2 cup olive oil shopping list
- juice from 1 large lemon shopping list
- 1-1 1/2 T Dijon shopping list
- 2T dill, dried or about 1/4 cup fresh shopping list
- dash(or 6) of hot sauce shopping list
- sprinkling of sugar shopping list
- salt and pepper shopping list
How to make it
- Boil potatoes until tender, but still a bit firm. Cool completely.
- Combine mushrooms, celery, peppers and onion in large bowl.
- Whisk together oil, lemon juice, Dijon, dill, hot sauce sugar and salt and pepper.
- Cube cooled potatoes and add to veggies.
- Pour dressing over veggies and toss to coat.
- Refrigerate a couple hours before serving to meld flavors.
