Cinnamon Pie Crust

- 1 1/4 cups flour shopping list
- 1/2 teasp. salt shopping list
- 1/2 teasp. cinnamon shopping list
- 1/3 cup plus 1 TBSP. vegetable shortening shopping list
- 3 - 4 TBSP. ice water shopping list
How to make it
- combine flour, salt and cinnamon, mix well
- cut in shortening with a pastry blender until crumbly.... about the size of peas
- sprinkle with ice water ..1 TBSP. at a time over the surface
- stir with a fork until the dry ingredients are moistened....****
- shape into ball.
- wrap in plastic wrap and chill about 30 minutes
- on lightly floured board using a floured rolling pin roll out dough to 1/8-inch thickness
- transfer to a 9-inch pie plate
- use sharp knife to trim edges of dough...about 1-inch beyond the rim of the pie plate.
- fold edges over and crimp...
- chill 30 minutes then use with your favorite recipe

- TIPS..... Do not over stir or work the dough ... it will make the crust tough
- Do not have room too warm...try to have a cool surface to work on
- roll dough out very gently...
- the pea size lumps in the dough makes the crust flaky...
