Ingredients

How to make it

  • combine flour, salt and cinnamon, mix well
  • cut in shortening with a pastry blender until crumbly.... about the size of peas
  • sprinkle with ice water ..1 TBSP. at a time over the surface
  • stir with a fork until the dry ingredients are moistened....****
  • shape into ball.
  • wrap in plastic wrap and chill about 30 minutes
  • on lightly floured board using a floured rolling pin roll out dough to 1/8-inch thickness
  • transfer to a 9-inch pie plate
  • use sharp knife to trim edges of dough...about 1-inch beyond the rim of the pie plate.
  • fold edges over and crimp...
  • chill 30 minutes then use with your favorite recipe

  • TIPS..... Do not over stir or work the dough ... it will make the crust tough
  • Do not have room too warm...try to have a cool surface to work on
  • roll dough out very gently...
  • the pea size lumps in the dough makes the crust flaky...

    Made an apple pie with the crust today. Nice and flaky. Mother gives it full-bellied five fork praises. The pie is reduced to a former shell of itself.

    Dough is in the fridge chilling. Used just over 3T ice water. Will get around to it sometime tomorrow.

    This recipe holds to the 3:1 ratio of flour:fat. I'll try to make this crust next.

    Cinnamon is supposed to have some shortening qualities to it, or so I have read. Have you any info on the subject?
