This is a versatile recipe that you can add fried bacon, sausage, tomatoes, onions etc. I have kept it basic because I am serving bacon and sausage on the side along with fried mashed potatoes, toasted zucchini bread and grilled pineapple slices.

Ingredients
  • 12 large eggs
  • 1cup heavy cream or whipping cream
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 cans (8 ounces) chopped green chile peppers, drained (optional)
  • 12 ounces shredded Sharp Cheddar cheese

Directions
  1. Preheat oven to 325°.
  2. In a bowl combine eggs, cream, salt, and pepper; beat until smooth and well blended. Stir in chopped chili peppers. Lightly grease a shallow 1-quart baking dish. Sprinkle cheese over bottom of prepared baking dish then pour egg mixture over cheese. Bake for 35 to 40 minutes, or until set. If desired, broil for a minute or two.
  3. You can add any of the meats or vegetable that I mentioned to make it a "complete" breakfast in one.

Okay, here's the deal... first you have to promise not to tell ANYONE. (Well, Vickie knows)... I've never made a casserole. Really, I'm not kidding. I just never been in a place where I've had the opportunity to come up with one. I guess I've just been too snobby. Not too proud of that necessarily lol. When I saw that you had posted this, thought I'd come in and come clean. I will be trying this, but not the full recipe -- probably just half to start with. I'm also branching out and trying some casseroles. Thank you sweetie
