Buttery Coconut Pecan Cake

- 2 cups flour shopping list
- 2 cups sugar shopping list
- 1 1/2 cups butter, softened shopping list
- 1 cup buttermilk shopping list
- 4 eggs shopping list
- 1 teasp. baking soda shopping list
- 1/2 teasp. salt shopping list
- 1 TBSP. vanilla shopping list
- 2 cups flaked coconut shopping list
- 1 cup chopped pecans shopping list
- ............................................................... shopping list
- frosting shopping list
- 1/3 cups butter shopping list
- 3 cups powdered sugar shopping list
- 1 1/2 teasp. vanilla shopping list
- 1 -3 TBSP. milk shopping list
How to make it
- preheat oven to 350' F
- In large mixer bowl.. combine all the ingredients EXCEPT the coconut and pecans
- beat at low speed until all ingredients are moistened
- then beat at high speed until smooth about 3 -4 minutes
- by hand fold in the coconut and the pecans
- pour int a greased and floured 13 x 9-inch baking pan
- bake at 350' for 45 - 50 minutes or until center of cake is firm to the touch and the edges begin to pull away from sides of pan
- cool completely

- FROSTING: browned butter frosting
- in1-quart saucepan heat 1/3 cup butter over medium heat.
- stir constantly until delicate brown about 5 - 6 minutes
- in small mixer bowl combine melted butter, powdered sugar and vanilla
- beat at medium speed,
- gradually adding milk scraping the bowl often until frosting is smooth and spreadable
- frost cooled cake
