How to make it

  • preheat oven to 350' F
  • In large mixer bowl.. combine all the ingredients EXCEPT the coconut and pecans
  • beat at low speed until all ingredients are moistened
  • then beat at high speed until smooth about 3 -4 minutes
  • by hand fold in the coconut and the pecans
  • pour int a greased and floured 13 x 9-inch baking pan
  • bake at 350' for 45 - 50 minutes or until center of cake is firm to the touch and the edges begin to pull away from sides of pan
  • cool completely

  • FROSTING: browned butter frosting
  • in1-quart saucepan heat 1/3 cup butter over medium heat.
  • stir constantly until delicate brown about 5 - 6 minutes
  • in small mixer bowl combine melted butter, powdered sugar and vanilla
  • beat at medium speed,
  • gradually adding milk scraping the bowl often until frosting is smooth and spreadable
  • frost cooled cake
