I haven't tried this cake but the pecans and the coconut were more than I could resist... it is a recipe from the land o' lakes cookbook Country Heritage

Ingredients
  • 2 cups flour
  • 2 cups sugar
  • 1 1/2 cups butter, softened
  • 1 cup buttermilk
  • 4 eggs
  • 1 teasp. baking soda
  • 1/2 teasp. salt
  • 1 TBSP. vanilla
  • 2 cups flaked coconut
  • 1 cup chopped pecans
  • ...............................................................
  • Frosting
  • 1/3 cups butter
  • 3 cups powdered sugar
  • 1 1/2 teasp. vanilla
  • 1 -3 TBSP. milk

Directions
  1. preheat oven to 350' F
  2. In large mixer bowl.. combine all the ingredients EXCEPT the coconut and pecans
  3. beat at low speed until all ingredients are moistened
  4. then beat at high speed until smooth about 3 -4 minutes
  5. by hand fold in the coconut and the pecans
  6. pour int a greased and floured 13 x 9-inch baking pan
  7. bake at 350' for 45 - 50 minutes or until center of cake is firm to the touch and the edges begin to pull away from sides of pan
  8. cool completely

  10. FROSTING: browned butter frosting
  11. in1-quart saucepan heat 1/3 cup butter over medium heat.
  12. stir constantly until delicate brown about 5 - 6 minutes
  13. in small mixer bowl combine melted butter, powdered sugar and vanilla
  14. beat at medium speed,
  15. gradually adding milk scraping the bowl often until frosting is smooth and spreadable
  16. frost cooled cake
