A delicious pound cake made with Coco Lopez Cream of Coconut. All ingredients are placed in the mixer bowl, then mixed. So easy. May be glazed.

Ingredients
  • 3 cups all purpose flour
  • 1/2 teaspoon baking powder
  • 2-1/2 cups sugar
  • 1 cup unsalted butter, softened
  • 1/2 cup Crisco
  • 3/4 cup Coco Lopez Cream of Coconut
  • 5 large eggs
  • 1 teaspoon grated lemon rind
  • 2 teaspoons pure vanilla extract

Directions
  1. Place all ingredients IN LISTED ORDER in a heavy duty 4 quart mixer bowl
  2. Beat on low speed with a heavy duty mixer for 1 minute
  3. Beat at medium speed for 2 minutes
  4. Pour into a greased and floured 10 inch tube pan
  5. Bake at 350 degrees for 1 hour 15 minutes or until a wooden pick inserted in the center comes out clean
  6. Cool in pan for 10-15 minutes
  7. Remove cake from pan, cool completely on wire rack
  8. Your choice of glaze is optional*
  9. May serve plain
  10. *Can make a thin glaze of cream of coconut, powdered sugar, a little butter and milk
