Coconut Cream Pound Cake

- 3 cups all purpose flour shopping list
- 1/2 teaspoon baking powder shopping list
- 2-1/2 cups sugar shopping list
- 1 cup unsalted butter, softened shopping list
- 1/2 cup Crisco shopping list
- 3/4 cup Coco Lopez cream of coconut shopping list
- 5 large eggs shopping list
- 1 teaspoon grated lemon rind shopping list
- 2 teaspoons pure vanilla extract shopping list
How to make it
- Place all ingredients IN LISTED ORDER in a heavy duty 4 quart mixer bowl
- Beat on low speed with a heavy duty mixer for 1 minute
- Beat at medium speed for 2 minutes
- Pour into a greased and floured 10 inch tube pan
- Bake at 350 degrees for 1 hour 15 minutes or until a wooden pick inserted in the center comes out clean
- Cool in pan for 10-15 minutes
- Remove cake from pan, cool completely on wire rack
- Your choice of glaze is optional*
- May serve plain
- *Can make a thin glaze of cream of coconut, powdered sugar, a little butter and milk
